Instructions
Marinate & cook chicken
Combine soy sauce (2 Tbsp), lime juice (1 Tbsp), fish sauce (1 Tbsp), brown sugar (2 tsp), turmeric (1 tsp), coriander (1 tsp), garlic (1 clove), and vegetable oil (1 Tbsp) in a bowl.
Add chicken slices, mix well, and marinate for at least 30 minutes (or up to 24 hours).
Heat a grill pan or skillet over medium-high heat.
Cook marinated chicken until fully cooked, about 3-4 minutes per side.
Sesame Dressing
In a bowl, whisk together peanut butter (¼ cup), soy sauce (2 Tbsp), rice vinegar (1 Tbsp), sesame oil (1 Tbsp), honey (1 Tbsp), ginger (1 tsp), garlic (1 clove), and water (2–3 Tbsp) until smooth.
Assemble Wraps
Place cooked chicken, cucumber, carrot, and bell pepper in lettuce leaves.
Drizzle with peanut sesame dressing.
Garnish with fresh cilantro and crushed peanuts.
