This Soba Stir Fry recipe brings together the earthy, nutty flavors of soba noodles with a vibrant mix of fresh vegetables, including red Napa cabbage, baby bok choy, and edamame, enhanced by the subtle bite of arame.

Bring a pot to boil, add the soba noodle, cook for 5-7 minutes, drain and set aside.
Heat a wok or large pan over medium heat, add the sesame oil (2 Tbsp), ginger (1 inch piece) and garlic (3 cloves). Let that cook down for a couple minutes.
Add the bok choy (5 whole), letting it get a little golden brown on the bottom, before adding the edamame (½ cup) and red napa cabbage (5 leaves).
As soon as the napa cabbage wilts, add the cooked soba noodles.
Add the tamari (2 Tbsp), toasted sesame oil (1 Tbsp), ume vinegar (2 tsp), maple syrup (1 Tbsp) and water (¼ cup), cook it down until it all comes together and the sauce evaporates.
